My blueberries are almost ready!

What does it say about me that I laugh like crazy when I see this word?

I will seek help immediately, but first, I want to share this recipe.

Go make this. Right now. If you don't have all the necessary ingredients in your kitchen, do what I do and beg from your neighbors. Send your kids to do your begging- they cute and small and way harder to say no to.
Trust me.

Blueberry Scones. Because it's getting to be blueberry season here in Maine.

2 cups flour
3 tablespoons sugar, plus more for sprinkling tops
1 tablespoon baking powder
3/4 teaspoon salt
6 tablespoons butter, cold and cut into pieces (3/4 stick)
1 1/2 cups fresh blueberries
1 teaspoon lemon zest
1/3 cup heavy cream, plus more for brushing tops ( I totally cheated and used canned milk. Cream! I never have cream!)
2 large eggs, lightly beaten



Sift together flour, 3 tablespoons sugar, baking powder, and salt.
Cut in butter until the largest pieces are the size of small peas.
Stir in blueberries and zest.
Whisk together cream and egg in a liquid measuring cup.
Make a well in the center of dry ingredients and pour in cream mixture. Stir lightly with fork just until dough comes together.
Turn out onto a lightly floured surface, and knead a few times to mix well.
Pat dough into a 6-inch square about 1 1/4 inches thick.
Cut into four 3-inch squares.
Cut squares in half on the diagonal to form eight triangles.
Transfer to baking sheet. Brush tops with cream and sprinkle with sugar.
Bake until golden brown, 20 to 22 minutes. Cool on wire racks.

Soooo good.

And if anyone on this island makes these and doesn't invite me over I will never forgive you.

  1. I love scones. Years ago, I adapted a couple of recipes to make one that worked for me and didn't have too terribly much fat. Now I can't remember the hacks. So sad.

    Perhaps I should create a new scone recipe with oatmeal flour...

  2. Thanks for posting this recipe. Ever since my dtr went to Ireland & England she's been wanting good scones-not like the ones we find here. I think this recipe is exactly what I've been hunting for!! I even have blueberry bushes but the birds seem to get them before we do... maybe I'll net them next year.
